How it Works
Two pairs of V-shaped notches, set at precise angles to suit either European-style knives or more acutely angled Japanese blades, let you sharpen blunt blades and then hone them to perfection, and a sliding protective cover makes it clear which pair of slots to use.
Two-step Sharpening Process
To sharpen a dull knife, draw the blade edge from heel to tip through the relevant coarse sharpener 8-10 times – we recommend doing this once or twice a month to maintain a sharp edge. To hone a blade to its finest edge, draw the blade using the same action a few times through the fine ceramic rollers in the same set.

Review: This is a manual knifesharpener for both european and japanese blades together with ceramic polishing for each type. It is easy to use and has a non-slip base that prevents any movement while sharpening.The hand grip is secure. It is easy to get into a routine of sharpening /polishing each knife regularly before use as the sharpener does not take up much space and can be kept next to the work surface. There are some filings present after sharpening so it is always necessary to rinse the knive before using. As both cooks in our house are left-handed the sharpener is used in a consistent manner, holding with the right and pulling through with the left.I think this is an excellent purchase and would certainly buy again although I suspect this item will be very durable!
